Recipe: Nutella No-Bake Cookies
Last weekend was the 4th Annual Burgh Mom Cookie Swap. It’s always held in early November, before everyone gets busy with school, family, etc and the general holiday craziness. If you are smart, you freeze a lot of your cookies, or take them to work. If you aren’t so smart, you eat all your cookies in 3 days. I’m not gonna disclose which of those categories that I fall into. *Ahem*
The cookie swap itself is a great time. The kids play and mostly leave the grown ups to talk and enjoy the company. Eventually we get around to the business at hand, exchanging cookies.
I usually try to make something different each year, but last year, my cookie was so good (if I do say so myself), that I HAD to make it again this year. Last year Xander was just about 6 weeks old at the cookie swap and I wanted to make something simple but different. I immediately thought of no-bake cookies. Super easy and they take almost no time. Then I had a flash of brilliance. What if I replaced the peanut butter in traditional no-bake cookies? What if I replaced it with Nutella? It really was a genius move. The result is those same great no-bakes, with a hint of Nutella taste. It really is the smartest thing I’ve ever done.
