Cheesecake Stuffed Strawberries
I like strawberries. A lot. I also like cheesecake. A lot. Together the two are absolutely sinful. But you wanna know a secret? Even though I like cheesecake (a lot) I can rarely eat an entire piece. It’s just too rich for me, so when I stumbled on this recipe for cheesecake stuffed strawberries the other day, I knew I had to give it a try. I mean honestly, who can resist such a thing. And it’s not too much cheesecake. Oh, and it’s simple. I’m all about simple.
It’s not really strawberry season yet, but I managed to find some decent looking strawberries at the local grocery store (on sale even!). First clean the strawberries and then hollow them out. Wanna know another secret? I always hollow out strawberries before I eat them so while some people *ahem* may think that this part is too time consuming, I would be doing it anyway.
Ok, so if you’re me you hollow out the strawberries, stash them in the fridge while you watch the first period of the Pens game (not today’s game where the Pens forgot to actually, you know play hockey. The game on Wednesday when they won). Then you bathe the kids and get them to bed. Finish watching the 2nd period and them make a mad dash to the kitchen to make the cheesecake filling during the intermission.
Take 1 8oz brick of cream cheese (softened). Mix with 1/2 cup of powdered sugar and 1/2 teaspoon of vanilla. I used my mixer because I was in a hurry but if the cream cheese is soft enough, you can probably do it by hand. Next step, stuff the strawberries! I don’t have a fancy pastry bag thing, so I just use a ziploc bag with the corner cut off. Make sure that you overfill the strawberries a little bit.
Once you have filled all the strawberries, crush up some graham crackers and sprinkle the crushed graham crackers on top of the strawberries.
Now, if you want to stop there, I promise your strawberries will taste great. BUT, if you want to add a touch of awesome to them, grab some chocolate chips, melt them and drizzle the chocolate on the strawberries. There you go, a touch of awesome!
Actual Recipe
20ish strawberries cleaned and hollowed
1 80z brick of cream cheese, softened
1/2 cup of powdered sugar
1/2 teaspoon vanilla
crushed graham crackers
chocolate chips, melted (optional)
Mix cream cheese, powdered sugar and vanilla until smooth; Stuff strawberries with cream cheese mixture. Top with crushed graham crackers and drizzle with melted chocolate chips. Enjoy!

Why the hell do you hollow out strawberries? I demand an explanation.
I have no idea. I think maybe my mom used to do it so now it’s just habit?

I use a small melon baller when I hollow out my strawberries! These are delicious. I suggest adding sliced almonds to the top too!
do u have to cook the cream cheese or just leave it in the fridge ??
No cooking required! Just put them in the fridge!

Wanted to know: if you put the finished strawberries in the fridge for a couple of hours, does the cheesecake part get hard and yucky or does it still taste good?

If you refrigerate the strawberries, the filling does firm up a bit, but it still tastes good. I served a few the next day and just let them sit out for about 10 or 15 minutes before serving. Enjoy!
